Christmas Gingerbread

Christmas is my favourite time for many reasons, but number 1 is definitely FOOD.

In particular, Christmas baking 🙂 I just love it. There’s nothing nicer then making a huge batch of cookies or cupcakes, sitting by the tree, with a warm fire and a cold glass of milk while watching Love Actually…

This deliciously simple recipe will fill your house with the smell of Christmas, and make you very popular with your friends 😉

Your shopping list:

  • 350g plain flour + bits for rolling out
  • 1 tsp bicorbante of soda
  • 2 tsp ground ginger (or extra if you like to season to taste)
  • 1 tsp ground cinnamon (as above)
  • 175g light soft brown sugar
  • 1 free-range egg
  • 6 tbsps golden syrup

Put all the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar. Add the egg and the golden syrup and knead until you have a dough…

Roll out, cut your shapes away 🙂

Whack the oven up to 180 fan

Check in ten mins and leave for a little longer if still quite soft.Remove, let cool, ice however you like!

Serve with a frosty cold glass of milk, or leave out with a sherry for Santa… 🙂
