I love cake! But you already knew that… I wanted to share my extra special festive recipe with you…
Every year I make these cakes, and every year they go down a storm! They’re just that little bit diferent to your average fairy cake and the decorations are super easy but a little bit more effective.
You’re going to need a few ingredients for these bad boys;
Ingredients:
150g plain flour
1 tbsp baking powder
1 tsp mixed ground spice
100g unsalted butter
160g dark brown sugar
2 large eggs
3 tbsp soured cream
125 ml boiling water
75g dark chocolate
1 tsp of instant coffee
pack of icing sugar
pack of butter
pack of coloured icing
Method:
Preheat your oven to fan 180C
In a big bowl, mix your flour, baking powder, bicarb and mixed spice.
In a separate bowl, cream together butter and sugar with an electric mixer, add the eggs one at a time whilst continually mixing. Now beat in a third of the flour mixture, followed by 1 tbsp of soured cream until all the flour mixture is mixed in.
Next, in a pan, melt your chocolate, water and 1 tsp of coffee; fold this in to the mixture slowly. You’ll have a really thin mixture on your hands but no worries, that’s how it’s supposed to be 🙂
Add the cake mix in to the tins, and throw in to the oven, for 18 mins. They should spring back up when you press them down.
Let cool, and whip up some butter cream icing. I tend to go with my instinct; if the mixture is too runny, add more icing sugar, if too thick add a splash of water and more butter until you have the consistency as you’d like it.
Spread your icing using the flat side of a knife, and then roll the red icing in to little balls, and roll your green icing out, cutting into diamonds. Lay the coloured icing on top 🙂
